2 cups fresh strawberries
1/2 cup light rum
2 tbsp lime juice
1 tsp sugar crushed ice champagne
1) In blender or food processor, puree strawberries, rum, lime juice, sugar and ice. You should get a very thick frozen slush. If not, just add more strawberries. You can’t go wrong here.
2) Add champagne as desired and stir lightly. Amy recommends 1 part champagne to 2 parts strawberry puree.
3) Pour into champagne flutes, martini glasses or a large pitcher and garnish with a lime wedge and sprig of fresh mint.
